Indian inspired Vegetarian dish

Ingredients:

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tsp fresh ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp garam masala
  • 1 tsp paprika
  • 1 tsp cinnamon
  • 1 tsp chili powder (optional, for more heat)
  • 400 g firm vegetables (e.g., cauliflower, potatoes, carrots), cut into small pieces
  • 200 g spinach, rinsed and chopped
  • 400 g chickpeas, rinsed and drained
  • 1 can chopped tomatoes
  • 200 ml coconut milk
  • Salt and pepper to taste
  • Fresh coriander for garnish
  • Cooked rice or naan bread for serving

Instructions:

  1. Heat the HOT WOK Gas Burner and place the wok pan on it. Add vegetable oil.

  2. Sauté onion, garlic, and ginger until the onions are soft and translucent.

  3. Add turmeric, cumin, coriander, garam masala, paprika, cinnamon, and chili powder. Stir well to release the aromas of the spices.

  4. Add the firm vegetables and stir them until they are coated with the spice mixture.

  5. Add spinach, chickpeas, chopped tomatoes, and coconut milk. Stir well and let the dish simmer for about 15-20 minutes until the vegetables are tender.

  6. Season with salt and pepper.

  7. Serve the Indian vegetarian dish over cooked rice or with naan bread.

  8. Garnish with fresh chopped coriander before serving.
